Vegan MoFo Day 13: Basil Tofu

Usually quite a lot of eating/recycling of leftovers goes on in my house - most recipes make enough for 4, which can mean 5 or 6 portions for me as I'm not a big eater. One portion gets eaten, one is eaten the following day and the rest gets frozen in single portions for those days when I don't have the energy to cook.Today was one of those days that called for just a straightforward meal - pasta spirals with a simple tomato sauce. I took one of those supermarket chiller cabinet tomato and basil sauces, added 4 cloves of crushed garlic, a cup of sliced mushrooms and the magic ingredient - half a pack of basil tofu, crumbled. 

I love Taifun tofu - it tastes so great that I am hard-pushed not to eat the whole packet as soon as I cut it open. My all-time favourite is the smoked tofu with sunflower and sesame seeds but the basil runs a close second.  Anyway, I served my pasta today with steamed broccoli, petits pois and sugarsnaps. Yummy, and ready in only 15 minutes.

    Did you try it with tomatoes, olive oil and even some more fresh basil, just like Italian mozzarella salad? I totally recommend that.

  2. god yes i love this tofu! luckily there's only a few places that sell them near me or I'd spend be spending all my money on taifun stuff.

  3. That sounds like a great idea, Tisi. I used to love a Caprese salad when I was vegetarian - I'll need to give it a try.

    I do spend a fortune on that Taifun tofu - it's so easy just to eat it straight out of the pack.
