Vegan MoFo Day 6: Yet another raw fruit and nut bar

It was a sad day for me when Larabars stopped being sold over here. I work irregular hours and often find I'm working at meal times so I need a little something to keep me going. A Larabar did a great job of staving off the hunger until I could get home and cook dinner. Nakd bars sprung up to take the place of the late lamented Larabar. They taste great and I still buy them but I also developed my own version:


Cocoa Lemon Fruit Fudge
1 cup cashew nuts
1 cup dates
1/2 cup filled almost to the top with sultanas (golden raisins) and then topped up with cocoa powder
1/2 tsp lemon extract
juice of half a lemon

Pulse the cashew nuts in a food processor until finely ground. Set aside. Pulse the dates until finely chopped. Mix in the ground cashews and the remaining ingredients and pulse some more until mixture starts coming together. Then either take teaspoonfuls and roll into balls between your palms or press into a small baking tray and then cut into pieces or press into chocolate moulds.
